About the baker
My day job is consumed with numbers and calculations as a structural engineer. Who am I kidding, it's mostly emails but you get the idea. Aside from baking bread my main hobby is photography. I have a separate site (www.stephenholst.com) for that.
I'm very left brain oriented which is evident from my day job. I started by approaching bread making with that analytical style. After a while I realized that it was much more flexible and forgiving than I was expecting.
I started baking bread in 2018. Since then I've ventured beyond sourdough into pizza dough, baguettes/french bread and soft pretzels. There have been others but those three have been my favorites.
About the site
Recently my mom pulled out of storage this odd aluminum box. She told us how my aunt used it to send clothes back home to be washed while she attended Bucknell University from 1948-52. The return address had a card with the name Tracy and White on it so I asked about it.
Apparently my grandfather had a part time business for a bit with a fellow named Tracy. My grandfather's name is Walter White. No, not that Walter White. This side business was to make wax sticks that were used to repair furniture.
When my sourdough really took off at the beginning of COVID-19 lock downs several recipients of my bread said I should go into business. Or rather just asked when I was going into business. While I don't plan on selling my bread, it did remind me of my grandfather's side business so I grabbed the name.
So I've named my starter after my two grandmothers. I've named this site after my grandfather on my mom's side. That just leaves my grandfather on my dad's side. Well for that I have his last name. Check, check, check and check.
