I thought I would provide a list of other bread recipes that I've enjoyed. Since I'm not a huge baker you can be pretty sure that they're not too complicated. These are more likely links to other breads with some personal tips.
Unkneaded Six-Fold French Bread
I came across this bread early in the 2020 pandemic. I was hooked after watching the video and seeing how simple and versatile it is.

I've made minor adjustments to the recipe list for just 2 baguettes
2 baguette ingredient list
286g flour
209g water
6g salt
1.5g of instant yeast (my scale can't go this low so I measure out 2g and then remove a little)
Soft Pretzels

I won't repeat his entire recipe because that is on his website.
The one thing I have learned is that in about a day these turn into rocks. The recipe makes 8 so I usually share them with neighbors the day they are made. Even if you put them in an airtight container the salt does weird things to the texture. But these are some of the best soft pretzels ever.
Pizzeria Locale pizza dough
I've tried several different pizza doughs and this is by far THE BEST! Unfortunately, they've closed but I have the recipe. Feel free to download it.
Ingredients by weight
(515g) 3.5 cups '00 flour (I use King Arthur organic bread flour)
(340g) 1.5 cups cold tap water (yes, use cold)
(8g) 2.25 tsp sea salt
(approx 3.5g instant yeast) 1 tsp dry active yeast
Other tips
Until you know your oven start preheating it about an hour before you plan to bake
The recipe calls for baking 7 min but in my oven, on a pizza stone, at 500 we keep it in 8.5 minutes. In a hotter pizza oven it may only need 3-4 minutes.
Ultimate Focaccia
When Paul Hollywood calls this "Ultimate" focaccia he's not wrong. This is my new favorite recipe for a shareable bread. It's almost better as part of the cocktail hour or appetizers than the main course.

At home I've been baking it at about 415oF with the convection setting on for about 30 minutes.
